Bagori Coffee Roast & Process Guide
Bagori Coffee Roast & Process Guide
All three coffees share the same origin: high-altitude Arabica grown at 3,041 ft (927 m) in the Toro Negro sector, Juana Díaz, Puerto Rico. What sets each cup apart is how the bean is processed and how far it is roasted. Use this guide to find the profile that suits you best.
Medium Roast — Washed Process
Variety: Limaní & Catuaí (Arabica)
Process: Washed, Sun Dried
Roast: Medium
Tasting Notes: Caramel · Nuts · Chocolate
After harvest, the cherry pulp is removed and the beans are immediately washed before sun drying. This keeps the cup clean and consistent — the flavors you taste come directly from the bean and the roast, with no fruit-fermentation influence. The result is a balanced, approachable cup with a smooth chocolate and caramel body.
Optional brew guidance: Works well across most brewing methods. Drip, pour-over, and French press all highlight the chocolate and caramel notes.
Honey Process — Light Roast
Variety: Marsellesa (Arabica)
Process: Red Honey, Sun Dried
Roast: Light
Tasting Notes: Honey · Nuts · Caramel · Sweet & Floral
In the honey process, the beans are dried with the cherry pulp still attached — a technique between washed and natural processing. The natural sugars in the pulp infuse the bean during drying, producing the sweet, floral complexity this coffee is known for. The lighter roast preserves those delicate aromas without overpowering them.
Optional brew guidance: Best suited to methods that let floral and sweet notes shine through. Pour-over, Chemex, or AeroPress at a slightly lower temperature tend to highlight the honey and caramel character.
Dark Roast — Washed Process
Variety: Limaní & Catuaí (Arabica)
Process: Washed, Sun Dried
Roast: Dark
Tasting Notes: Chocolate · Wood
Like the Medium Roast, the Dark Roast uses a fully washed process — pulp removed and beans washed before sun drying. Taken further into the roast, the bean develops a bold, robust body with deep chocolate and woody notes. This is a strong, full-bodied cup built for those who prefer intensity.
Optional brew guidance: Well suited to espresso, stovetop moka pot, or French press. The bold profile also holds up with milk-based drinks.
